Pu-erh tea, China's most renowned Hei Cha, is a fermented tea originating from Yunnan Province. LAO CHA TOU ("Old Tea Heads") are unique nuggets formed during the specialized piling fermentation process of Pu-erh production. During fermentation, rising temperatures activate the tea leaves' natural enzymes while workers aerate the piles 4-5 times to prevent scorching. The natural pectins and soluble sugars released during this process cause select leaves to coalesce into dense, tightly curled nuggets.
